Colusa Corn Muffins

   2/3 cup milk
   1/3 cup butter, melted
   1/2 cup agave
   2 eggs
   1 1/2 cups whole wheat flour
   2/3 cup cornmeal
   2 1/2 teaspoons baking powder
   1/4 teaspoon salt

Colusa Corn Muffins is from the Cook'n with Agave collection.

In small bowl, beat together milk, butter, agave and eggs. Set aside. In large bowl, stir together dry ingredients. Add agave mixture. Stir just enough to barely moisten flour. Do not over mix. Spoon batter into paper-lined or greased muffin pan cups. Bake in preheated oven at 350°F for 20 to 25 minutes. Serve warm.
